food for thought

 
so, while on my summer break i decided to cook more.
here are a few pictures of the recipes i have been trying out... enjoy!

all those citrus slices went into this sweet sangria...i perfected my recipe this summer!


this is a crock pot french dip with au jus... it was pretty delicious :)
here it is again... yummy!

i have started making my own guacamole... this was my first attempt, made with sour cream...
i like the regular kind better, but it was pretty good.

cilantro lime rice... mmmmm! :)

dipped pretzels for the family reunion...these were a total hit with kids and adults!

Hello Fall, Hello October!



Fall is my favorite time of year. I love the colors, the cool weather, pumpkins, haystacks, leaves, fall festivals, hot apple cider, mums...basically all things fall. October has been my favorite month for as long as I can remember. It is the time when you begin to feel a change in the air. The cool, crisp mornings are perfect for sitting on the porch while drinking a pumpkin spice latte and losing track of time because you just can't stop staring at all the beatiful colors that appeared overnight.
I mean,  really, what is better than a pumpkin spice latte? Maybe pumpkin cheesecake. I don't just love fall because of all the wonderful pumpkin desserts and beverages, but they are a nice perk!

October has come to mean more to me than just cooler weather and sweatshirt season
(I L.O.V.E. sweatshirt season...if you live in the south, you know what I mean).
I (we) moved into our first house in October (3 years ago) and then we got engaged week later! I will share that story soon. The next year we got married in October (10-10-10 to be exact) and last year we celebrated our first anniversary (with pumpkin cheesecake, of course!). This year as we near anniversary number two, life is pretty calm and I am enjoying every moment.

When I started this blog several months ago, I did not plan on making a few posts and then completely abandoning it. But, so is life. So, I thought what better month to pick it back up.
Hopefully this time I will stick with it. I have a lot to share!

So, I hope you are all gearing up for a wonderful month and a fabulous fall!

Busy

Well, these last few weeks have been BUSY! And the next few will be busy too.
But, it has been a fun kind of busy. I have spent a lot of time with family and friends and it has been wonderful!

I found my camera in the pantry on Tuesday! It was a magical moment! My camera has been lost since July 2011. I don't know how or why it was in the back corner of the pantry, but I sure was glad to find it. Now, time to take pictures and then share them!

Today I was walking through Marshall's and I saw some words on a coffee mug that quite literally stopped me in my tracks...

"Never get too busy making a living that you forget to make a life."

Just something to think about before the weekend. :)

Life in Numbers

We live in a crazy world. Too much to do, too little time. So many people, so many things.
Lately, I have been thinking a lot about numbers. We place so much  importance on the numbers in our lives; age, weight, the size of our clothes, how much money we make, how many hours a day we work, how many days we have off, how many hours we sleep...you get the point. Everything has a number. Some of them are good, some are bad, some we want to change and some we want to freeze in time.

Since I turned thirty I feel like I am looking at life differently. I have always been an "over-thinker".
I am not spontaneous. I am a planner in every way imaginable. I have high anxiety when things go off course...like the world will spontaneously combust if "the plan" is not followed exactly.
Well, let me just tell you... things change, plans fail and as far as I know...the world is still in tact.

I am slowly learning some very valuable lessons.

*I am NOT defined by a number...on a scale, on the label of my clothing or my age. This is a lesson that I struggle with every day.
*Time is not on our side. Even though we only have a few short hours instead of days to spend with friends/family... the time we have is a gift.
Make the most of every moment because moments make memories.
*Work is necessary; so love what you do and do what you love. So much time is spent at work...if it is something that is not fun (at least a little), don't do it. I started a new job about 6 months ago and I love it! I don't make much money, but I am enjoying life and I have more off time.

These are just a few "numbers" that have been on my mind lately.

Double Rainbow

Can you see it? It's a double rainbow!

This picture is a little better... isn't it beautiful!

This is the biggest rainbow I have ever seen...EVER!


Rainbows catch me by surprise every time. They are so unexpected. They are so incredible.
Somehow, out of nowhere, arrives this glorious display of beauty.

I saw the rainbow in the pictures last Saturday.
Then, on Thursday afternoon, I got to see another double rainbow!
What are the odds? Two double rainbows in one week!

Thursday was a difficult day...just stressful and annoying, the way life can be sometimes.
But, on the way home, a gorgeous view! I swear I followed that rainbow all the way home.
I couldn't believe it. Usually they only last a few minutes, but not that day. My drive home from work is thirty minutes. That's how long Thurday's rainbow lasted...thirty minutes!

Sometimes we need a little reminder that He is looking out for us, a reminder that He is on our side.
A reminder that no matter how bad things seem, they will get better...eventually.
Thurday's rainbow was my little reminder that I am not alone, especially on the worst days.
And my little reminder was right in front of me the whole drive home. :)

And when I walked through the door, my sweet baby dog was there waiting, with a smile on her face and a tail that never stops wagging.
She makes every day better.

Puppy Love




Meet Avery!

This is my precious baby, Avery. She is the best dog in the world!
I may be slightly biased, but many people agree with me.
She is easy to love. I loved her from the first moment that I saw her and I love her more every day.
She is always happy, always smiling and always willing to snuggle... and let's be honest, that face is adorable!

Avery will be eight years old next month...get ready for the celebration! 

So, this is the first of many posts dedicated to my sweet baby dog.

Hello!

This is my first official blog post...really I just want to see if this actually works.

Just Add Clay has several meanings for me.

First, my married last name is Clay. I have been married for a year and a half and I have yet to legally change my name. It is going to be difficult for me to just add Clay as my last name. Adam, my husband, is totally fine with me keeping my maiden name. Bless him. I did tell him before we got married that I wouldn't change my name until I was pregnant...or until my current driver license expires.

Second, just add clay has a spiritual meaning. I have always liked the way God is described as the potter and we are the clay. When we make mistakes in life we, as the clay, get cracked or broken. He simply adds clay and with the care of His hands we are made new and perfect in His sight.

Third, I live in Alabama. There is no shortage of clay around here. I am no farmer, but if I were...no, nevermind, I don't think I would make it as a farmer. :)
I love the outdoors and all the wonderful trees and flowers, the blue sky and the green grass. What I don't like is pollen, bugs, bees, smelling like the outdoors...you get the idea. See why I stopped myself with the "if I were a farmer" statement.

Ok, I am sure as I go along that "Just Add Clay" will have more meanings, but three in one post is enough for me.

That is all for this first post of mine. I know, not very exciting. No pictures, no great words of wisdom.
But, hey, this is my first post...it can only get better from here!
